Chocolate Meringue Cookies
Recipe makes about 2 dozen cookies
Ingredients:
3 egg whites
3/4 cup sugar
3 tbsp cocoa powder
6 oz chocolate chips
Directions:
Preheat oven to 250 degrees
Using an electric mixer (note: you cannot make these with just a wisk), beat egg whites and sugar until peaks are very stiff (about 10 minutes)
Add in the cocoa and blend into the meringue with a spoon
Add in the chocolate chips and mix in
Drop tablespoons dollops of the cookie mix onto greased aluminum foil covered cookie trays, and cook for 45 minutes
